Asian Noodles

The past week has gone by so quickly! I wanted to share a recipe with you that I found on Pinterest and proceeded to tweak to whatever we had in our cabinets. It turned out so well and really hit the spot - I've been eating the leftovers faithfully for lunch. Here is my version of Spicy Thai Noodles.



Mix 2 tablespoons of black pepper and 3/4 cup vegetable oil in a small saucepan and heat over medium heat for 2 minutes. Strain out pepper and reserve oil in a bowl. Add 6 tablespoons syrup and 6 tablespoons soy sauce to oil and mix well.

Boil a package of whole wheat noodles (linguine, vermicelli, whatever) according to package instructions.

While noodles are boiling, chop up some pork loin cutlets into bite-sized chunks and saute in a skillet over medium heat until cooked. Salt and pepper to taste.

Drain pasta into a bowl. Pour oil mixture over noodles and toss to coat.

Toss in 1/2 cup chopped cilantro, 1/4 cup of shredded carrot, and the cooked pork, and stir to combine.



Voila! So delicious. Here is the original recipe if you have more ingredients on hand - it probably tastes more authentic too, but my version did the trick in a pinch!
